No’ Oats Meal
It’s just like the real this, but without the blood sugar spike!
INGREDIENTS Makes 1 Serving
1 cup frozen cauliflower
1 scoop of vanilla collagen or protein powder
1-2 pasture eggs
2 tbsp chia seeds
1 tbsp flax seeds
1 cup liquid
pinch of pink salt
INSTRUCTIONS
Prep Time: 2-3 min Cook Time: 10
In a small pot over medium heat add cauliflower rice with a cooking fat.
While cauliflower cooks add chia, flax, collagen and liquid to a high speed blender. Blend on high for 30 seconds or until seeds have blended and mixture thickens.
Once cauliflower has cooked (about 3-4 min) add in 1-2 eggs. Stir to combine and once eggs have cooked add in the liquid mixture.
Stir to combine and allow it to cook for another 1-2 min or until it warms up.
Remove from heat and top with your favorite oatmeal toppings!
Some of my favorite toppings include butter, wild blueberries, bee pollen, whole milk, walnuts, honey and coconut whipped cream.
Mishi tips:
-I always aim for 20-30g of protein at each meal. Use this as a gage to know how much protein or collagen to add and number of eggs.
-Be sure to add enough cooking fat to the pot because both the egg and liquid mixture will stick to the bottom.
