Almond butter Asian slaw

INGREDIENTS serves 2

  • 2 cups organic shredded red cabbage (or any slaw mix)

  • 2 tbsp almond butter (or natural peanut butter)- no seed oils or sugar added

  • 2 tbsp coconut aminos

  • 1 tsp rice vinegar or lime juice

  • 1 tsp toasted sesame oil

  • 1 slice of lime (for garnish)

  • Optional Toppings: crushed macadamia nuts + sriracha sauce

INSTRUCTIONS

Prep Time 10 min Cook Time 30 min

  1. Shred 2 cups of red cabbage into a small bowl and set aside. Can buy pre shredded cabbage to save time.

  2. Mix together all wet ingredients until you reach a smooth and creamy texture. If your sauce seems a bit runny add more almond butter, or too dry you can add more coconut aminos.

  3. Combine cabbage and wet ingredients and mix until cabbage is completely covered in nutty sauce. 

  4. If adding on optional toppings now would be the time to add to your desired amount

  5. Serve as a side or with a protein for a complete meal! (I recommend chicken thighs).
