Keto coconut oil chocolate chip cookies

INGREDIENTS makes 16 cookies

  1. 1/3 cup softened (not melted) coconut oil

  2. 1/4 cup lakanto golden sugar

  3. 1/4 Cup Sugar Free Syrup

  4. 1 pasture raised egg

  5. 1 tsp of Vanilla Extract 

  6. 1.5 cup Almond Flour

  7. 1/2 tsp Baking Soda

  8. 1 tsp of Cinnamon

  9. 1/2 cup dairy and sugar free chocolate chips

I like to use sugar free & dairy free chocolate such as HU and Evolved.

INSTRUCTIONS

Prep Time 10 min Cook Time 13 min

  1. Pre-heat oven to 325F. 

  2. In a small bowl, combine and mix your egg, coconut oil, sugar, sugar free syrup and vanilla. 

  3. In a separate bowl, mix together almond flour, baking soda and cinnamon.

  4. Combine wet and dry ingredients, mix until a dough forms. 

  5. Fold in the chocolate chips, I measure with the soul!

  6. Spoon out 16 cookies onto a parchment lined cookie sheet and press to slightly flatten. 

  7. Bake for 10-13 min or until edges are golden brown.

  8. Remove from oven, they will be very soft. You’ll need to allow them to cool on a cooling rack for 20 min.

  9. Enjoy!
