OVEN ROASTED CHICKEN
This is a weekly staple, I make salads, soups and of course my bone broth!
INGREDIENTS serves 4-5
1 Organic Pasture Raised Chicken
1 TBSP Ghee or Cooking Fat
2 tsp Thyme
1 tsp Rosemary
1 Lemon Halved
Himalayan Salt & Pepper to taste
For additional flavor and health benefits add 2-3 garlic cloves, I omit as this food doesn’t love me back.
INSTRUCTIONS
Prep Time 5 min Cook Time 70 min
Allow chicken to reach room temperature (30 min typically). Preheat oven to 375F.
Remove any chicken bits from the cavity (neck, heart, liver). I save these for my bone broth.
Pat chicken dry with paper towel and generously salt & pepper the inside and out side of your chicken.
Rub chicken with cooking fat and sprinkle with thyme and rosemary. Half lemon and stuff cavity. If adding garlic half cloves and stuff cavity with lemon.
Tie legs together with cooking twine or foil. Tuck wings under the chicken and place BREAST side up in an oven safe pan.
Bake for 70 min or until internal temperature reaches 165F. Remove from oven, allow to cool for 10 min before carving.
